Stir-fried asparagus, mushroom and mangetout peas (hard boiled egg is optional)

Stir-fried asparagus, mushroom and mangetout peas (hard boiled egg is optional)

This can either be a side dish, snack or a main meal (light dinner). Enjoy

Ingredients

  • 250g asparagus, cut into 1 inch pieces
  • 125ml chicken stock
  • 1 tbsp corn flour
  • Spray oil 250g
  • chestnut or oyster mushroom, thinly sliced
  • Pinch of chilli flakes
  • 1 tbsp fresh chopped parsley, to garnish
  • 1tbsp fresh chives, to garnish

Method

  1. Steam the asparagus and mangetout peas for 4-5mins or until tender, then set aside.
  2. Mix the chicken stock, cornflour and water in a small bowl and set aside.
  3. Use spray oil in a large wok or frying pan and place over medium heat.
  4. Stir fry the asparagus, mangetout peas, mushrooms and chilli flakes for 1-2mins.
  5. Reduce heat and add the corn flour mixture and cook , stirring constantly for 2-3mins until thick.
  6. Remove from the heat. Season to taste, garnish with the parsley and chives and serve immediately.
  7. Remember to have a glass of water after each meal
