Quinoa & Bulgar Wheat Yummy Combo
  1. Ingredients

1 Tbs extra virgin olive oil
1.5 cups of cooked prawns
1.5 cups of frozen mixed vegetables
1/4 tsp of celery salt, onion salt each
1/2 of dry Dill
1tsp jollof spice (optional)
1 knot cube
1/4 cup of coconut milk
1tbs mild curry
Chopped basil and black sesame seeds to garnish

 

Method

Cook Quinoa and bulgar wheat in water until half-cooked, and set aside

Heat oil over medium heat, pour in prawns, stir for about 1-2mins
Add mixed vegetables and continue to stir for another 2-3mins

Add all spices, chicken stock and coconut milk
Allow to simmer for another 2-3mins

Pour in Quinoa and bulgar wheat. Mix well with the prawns and vegetable sauce. Add a little water (enough to cook the Quinoa to your desired texture).

Reduce heat and allow to cook for 2-3 minutes ( or longer depending on how soft/cooked/over cooked you want the Quinoa to be).

Plate and garnish with chopped basil and black sesame seeds
